THE SECRET TO MAKING THE BEST STEAK EVER

If you’ve been on Twitter recently you’ve most likely seen Chef Gordon Ramsay roasting the sad state of civilian style chef-ery.

 

… and this might be the guy on Facebook who claims our Rare to Well Done Meat Lovers Guide temps were “too high!”

 

 

While it’s entertaining to watch these roasts from the sidelines, we’d never actually want to be one of the unfortunate souls having to eat these sad and hopeless meals. While it’s an honor for some to get roasted by Gordon Ramsay, we aim a bit higher. More importantly, it doesn’t take much to prepare the perfect steak and avoid social media embarrassment all at the same time.

What’s the secret? The Reverse Sear! This trendy technique involves slowly bringing the steak to temperature and then finishing with a hot sear. Why is it so popular? Well, the reverse sear delivers delicious smoky flavors while searing in meaty juices and classic grill marks. While there are a few considerations and it might take a few attempts to perfect, follow our handy guide and you’ll be on your way to earning respect from the grill masters in no time.

Now, if you’re looking for a well-charred crust and warm pink center, try the reverse sear on these ideal cuts works:
– Tenderloin (aka Filet Mignon)
– NY Strip
– Porterhouse
– T-Bone
– Ribeye
– Tri-Tip
– Sirloin

Now it’s time to roll up your sleeves and get to work!

 

 

 

Step 1: Select your cut of beef

Step 2: Using a smoker or grill, take your choice cut to 225 F until it’s just about your desired doneness. This will usually take between 45 minutes and 1 hour. Check the internal temperature and refer to our Rare to Well Done Meat Lovers Guide to make sure you’ve got your temps correct.

Step 3: To avoid a bloody mess, remove the steak from the heat and let it rest for appx 10 minutes while you up the heat to high. Effective searing occurs from 350 F – 500 F.

Step 4: After resting the steak and the grill is ready, toss your choice cut on the grates for about 1 minute on each side. When your steak has hit your desired temperature, you’ve made it across the finish line.

Step 5: Remove your steak and enjoy the fruits of your labor.
